Energy bites are a great thing to have on hand. They're a super tasty snack alternative to store-bought granola bars, and they're also super customizable, meaning you can make them as sweet or savoury as you like. They're so easy to make too! 10 minutes in a food processor and BINGO, you're done.
Here's the recipe I like best:
Ingredients
1 cup of organic rolled oats
1/2 cup of flax seeds
1/2 cup of walnuts
1/2 cup of pecans
1 tablespoon of coconut oil
1/3 cup of organic, natural peanut butter
1/4 cup of raw honey
1/4 cup of raw shredded coconut (topping - optional)
1 teaspoon of vanilla extract
Method
Place all your ingredients into a food processor and blend. Once everything is looking smooth and creamy, place into the fridge for 10 minutes to cool.
Remove and use your hands to roll into 1-inch balls, than coat them in raw coconut (optional)
Store in the fridge for up to a week!
